Don't forget that you can print this (or any) recipe using the "Print Friendly" button at the foot of each post. It's a great little feature that allows you to save any recipe as a PDF, email a recipe to yourself (or a friend) and remove any pictures (or any text that isn't relevant to the recipe) before printing! That can save on ink and paper. Who doesn't want to save a little cash when you can?!

I'm hangin' in there, Rob. Hope all is well with you, too. The plan is to get back to posting more regularly in the not too distant future. I've got a couple of posts in the works and I'm just putting the finishing touches on a total blog design overhaul, so it'll be looking quite different around here pretty soon. It felt like it was time for some changes. Don't feel bad about not knowing that the Superbowl was this weekend. I don't watch ANY sports ~ unless I happen to walk into a room where someone else is watching them. T really only watches golf, but he does generally watch the big championship games because he's usually in on one of the office pools. I do enjoy seeing some of the new commercials and I'll watch the half-time show if it looks interesting. Back in the stone age, we'd have a big ol' party on Superbowl Sunday (and just about any other event we could dream up an excuse to have a party for), but those days are g-o-n-e. I've got about 2 or 3 major holiday gatherings in me these days and even those are more and more difficult to pull off each year. Guess that's what happens when ya get old AND ya get sick. LOL I wish it could be different, but I just try to go with the flow and hope for the best. :)

I haven't thrown a Superbowl party in ages, so it would be fun to re-live the experience through you! LOL Hope you haven't been hit too badly out there on the coast by this polar vortex that's descended upon us. I've never been out to the coast in Winter so I could be completely off base, but I would imagine that the air must be even more frigid when it's coming in off of the sea. Brrrr! I'm shivering just thinking about it! Stay warm and enjoy the big game this weekend!
DeleteHi, Mary! That Pinto-cado dip looks interesting. I think I'll give it a try. We've had to really make some adjustments around here diet-wise with my elevated cholesterol level and Ramon's new health issues. I'm on the lookout for all kinds of low-carb, low cholesterol stuff that won't make us think we're being cheated out of "real" food!!! :-) Oh...I made the pork chops pizzaiola last night with just a few adjustments for our dietary restrictions. Mm, mm, good!!!

I'm not sure I remember correctly, but I think you mentioned in the past that you & maybe Ramon too, are big avocado/guacamole fans and have also been cooking with beans a lot lately, right? If so, I really think you'll like the Pinto-Cado. And... Since I first posted it, I've found that it also makes an excellent hot dip. You just pop it in a small baking dish, sprinkle some shredded jack cheese on the top and bake at 350 for about 15 minutes. (you could certainly use your favorite reduced fat cheese if you're cutting back, of course)
DeleteHmmm. I haven't made pizzaiola in quite a while myself, so you've got me thinking... I've been wanting to make it with chicken for some time, so that might be on the menu for this weekend for us. Thanks for the reminder! Oh! Since we're on the subject of substitutions... I have a friend who is working on going gluten free for heath reasons and she's become hooked on this new concept that uses cauliflower to make pizza "crust". Aside from being gluten free, it's low or practically no carbs. She says it's absolutely delicious and you'd never know that the "crust" isn't made from a traditional dough. You might already know about it or maybe you've even tried it, but if not I can hook you up with the recipe if you're interested! Just let me know.
