Old Fashioned Cottage Pudding

This is one of the easiest "comfort desserts" that I make. My mother made it often when we were growing up (as did her mother before her) and I used to make it when our daughter was younger.  It might sound a little boring, but there's just something about that soft yellow cake and the warm, sweet, buttery sauce that makes me feel like I'm being taken care of.  It's been a long time since I've made it, but with the colder weather creeping in, I'm feeling the need for a little comforting.





My grandmother made simple yellow or white cakes quite often and served them with fresh berries or applesauce for a quick weeknight dessert.  On the second or third night, she would use the day(s) old leftover cake and make this simple sauce to go over it. There are several slightly varied recipes for this sauce out there and back in Grandma's day, they included the recipe for the cake as well.



Since my mother wasn't the type to make baked goods on a daily (or weekly) basis, when she had a yen for a little old fashioned dessert she used a box of Jiffy yellow cake mix.  If there were friends of mine or my brother's staying for dinner on a particular night, she'd make a double batch of cake and sauce. Let's face it... There was a time when I would have NEVER used a boxed cake mix for anything, but with my mixed bag of health issues now,  my days of having enough stamina to make everything from scratch are pretty limited.  So...

This is Mom's (and My) Version:

Cake

1 or 2 Boxes of Jiffy Yellow Cake Mix, mixed and baked according to the package directions. (Or, you can use any yellow cake mix that you prefer or make a cake from scratch)

Vanilla Sauce

1/2 C Butter
1/4 C Flour
1 C Sugar
1 Tsp Pure Vanilla Extract
Pinch of Salt
2 to 3 Cups Boiling (or very hot) Water

In a saucepan, melt the Butter, whisk in the Flour and Salt. Cook this on medium heat for about 4 to 5 minutes, stirring or whisking the mixture to keep it from browning or burning.  Slowly add in 2 cups of the Water and continue to whisk until it reaches a slightly thick, smooth consistency. Add the Sugar and continue stirring until it disolves. Add the Vanilla and as much of the remaining Water as you need to make the sauce just slightly translucent.  (I found a pic on Google Images that shows the sauce consistency pretty well. If I make this in the next day or two, I'll post my own pics later.)

It might not be the prettiest dessert, but it sure is yummy and definitely what I call comfort food!  Hope you give it a try.

    1. Hi Dorothy! It's actually white (granulated) sugar. I'm sure that you probably could use brown sugar if you wanted to, but I've just followed my Mom's recipe for years and never thought to change it up.
